build(profile): 更新构建配置和版本号

- 将 AppScope版本号从 1.0.7 修改为 1.0.0
- 修改 BuildProfile.ets 文件中的构建模式为 release，关闭调试模式
- 更新 build-profile.json5 文件中的证书和密钥信息
